Keto Chicken Meatball Zoodle Soup is an irresistibly nutritious dish combining zucchini noodles (known as “zoodles”) with chicken meatballs to create an indulgent and hearty meal. Usually made with chicken broth as its base, but vegetable broth may also work for vegetarian or vegan eaters. Zoodles make an ideal low-carb pasta replacement and pack plenty of nutrients; chicken meatballs contain ground chicken combined with almond flour and an array of herbs and spices for an additional protein source.
Ingredients
To make Keto Chicken Meatball Zoodle Soup, you’ll need the following ingredients:
- For the chicken meatballs:
- 1 pound ground chicken
- 1/4 cup almond flour
- 1/4 cup chopped fresh parsley
- 1 tablespoon chopped fresh oregano
- 1 tablespoon chopped fresh thyme
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
For The Soup:
- 4 cups chicken broth
- 1 medium onion, chopped
- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 2 cups chopped kale
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 medium zucchinis, spiralized into noodles
- Fresh parsley, for garnish
Instructions
Preheat the oven to 400degF.
Mix together ground chicken, almond flour, parsley, oregano, thyme, garlic powder onion powder salt and pepper until all materials have been fully blended together. All materials should be thoroughly mixed once mixed.
Form the chicken mixture into small meatballs about the size of golf balls and place on a baking sheet covered with parchment paper for baking.
Cook the meatballs in a preheated oven for 20 minutes or until fully done.
Melt olive oil over medium heat in a large Dutch oven or soup pot and add chopped onion, carrots, and celery for 7-7 minutes until vegetables have softened.
After adding minced garlic, continue sauteing for one or two more minutes.
Bring the mixture to a boil after adding chicken broth to your pot.
Reduce heat to low and stir in chopped kale; simmer the soup for 10-15 minutes or until all the kale has become tender.
Add the zucchini noodles and continue cooking for 3-4 minutes or until tender.
Add the chicken meatballs to the soup and allow them to warm for 2-3 minutes in their bath of heat.
Add salt and pepper according to taste when making soup.
Hot soup should always be garnished with freshly chopped parsley before being served to guests.
