Ingredients:

- 1 pound of thinly sliced, skinless, boneless chicken breasts
- 2 tbsp avocado oil
- 1 bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 2 tbsp coconut aminos
- 1 tsp sesame oil
- 1 tsp ginger powder
- 1 tsp garlic powder
- Salt and pepper to taste
- Optional: chopped scallions and sesame seeds for garnish
Instructions:
Avocado oil should be added to a large skillet that has already been preheated at medium-high.
Add the chicken strips and cook until browned and fully cooked through, about 5-7 minutes. After taking out of the skillet, remove from heat and set aside.
Add the chopped bell pepper and onion slices to the same skillet and continue cooking until they begin to soften, about 3-5 minutes.
At the last minute of cooking, add minced garlic.
Bring back together the cooked chicken with its accompanying vegetables in the skillet.
Combine coconut aminos, sesame oil, ginger powder, garlic powder, salt and pepper in a small bowl until everything is thoroughly mixed together.
Pour the sauce over the chicken and vegetables and combine until everything is evenly covered with it.
Stirring every two to three minutes, continue cooking for another 2 to 3 minutes until everything has been thoroughly heated.
If desired, garnish your meal with sesame seeds and finely chopped scallions for added flair.
